It means utilizing our resources in an efficient and renewable manner, dedicating ourselves to ensuring the health of our guests by striving to use the most naturally grown product. “I grew up in Australia, and we had free range chickens. When they industrialized we sold the farm and moved to town so I have happy memories of that and when I retired I wanted to go back to farming. One way to make a little money is to sell eggs, and I did it the way I like to do it. I follow the Joel Salatin model of moving the chickens and giving them free reign. I keep them as healthy as I can.”
